Recipe of the Month – April 2013
Breakfast: Apple, Pecan & Cinnamon Multigrain Pancakes
A variation on regular pancakes, these multigrain pancakes incorporate pecans and apples for a delicious and nutritious start for the day.
Multigrain pancake mix
1/4 apple, peeled and chopped
2 tablespoons chopped pecans
sprinkle of cinnamon
All ingredients can be increased according to taste.
Follow instructions for pancakes on package (usually 1 cup mix to 1/2 cup water for 8small pancakes)
Add chopped pecans, apple and cinnamon. Heat skillet with a teaspoon of vegetable oil. Use a scant 1/4 for each pancake and cook approximately 3 mintues per side.
Accompany with butter, maple syrup or applesauce.
