Baked Rice with Pine Nuts

Accompaniments: Baked Rice with Pine Nuts

Ingredients 
2½ tbs butter
2 tbs minced onion
¼ tsp minced garlic
1 cup uncooked rice
1½ cups chicken broth
2 sprigs parsley
1 sprig fresh thyme or ¼ tsp dried
½ bay leaf
1/8 tsp. Cayenne pepper or Tabasco sauce
¼ cup toasted pine nuts

Instructions 
Preheat oven to 400°. Melt 1 tbs. butter in a heavy ovenproof saucepan and cook the onion and garlic, stirring, until the onion is translucent. Add the rice and stir briefly. Stir in the chicken broth, make sure there are no lumps, add parsley, thyme, bay leaf, and Cayenne. Cover with close fitting lid and place in oven for 17-20 minutes. When done, remove parsley, thyme, and bay leaf. Using a fork, stir in the remaining butter and pine nuts.
