Appetizers & Sorbets: Cannelloni Filling
1 pound of veal scraps
1/2 pound Proscuito cut on a large dice
2 pounds fresh spinach
1 pound of chicken breasts, grilled or poached
Salt, pepper and nutmeg to taste
Brown veal and Proscuito. Dice the chicken. Wilt the spinach in a large saucepan with lid in small amount of water.
Grind all ingredients together, alternating meats. Season to taste.
Use to fill Cannelloni, baby zucchini or mushrooms.
