Caribbean Snapper

Entrees: Caribbean Snapper
Serves: 4

Ingredients 
2 large ripe tomatoes
3 tbs seasoned bread crumbs
salt and pepper
1 large snapper fillet, cut into 4 pieces
½ cup white port
4 tbs butter
1 tsp
lime or lemon juice
2 tbs Parmesan cheese
Paprika

Instructions 
Peel and slice tomatoes. Place in ovenproof dish and sprinkle with bread crumbs. Season with salt and pepper, top with snapper. In a small saucepan combine port, butter, and lime juice. Cook over low heat until butter melts. Increase heat and boil 1-2 minutes. Pour over fillets and sprinkle with 2 tablespoons Parmesan cheese and paprika to taste. Bake at 500° for 10 minutes.
