Recipe of the Month – May 2013
Entrees: Glazed Salmon Fillet with Mustard Dill Sauce
Salmon is one of the best sources of natural Omega 3 fatty acids. This substance helps your body with preventing chronic inflammation, with cognitive function, cancer prevention and aids in eye, cardiovascular and skin and hair health. Often people say they don’t like salmon because it has a fishy taste. I think you will be pleasantly surprised by this recipe. It is one that is in my cookbook (which is also in the Recipe Collection on the website) but one I think worth bringing back. Spring is a great time for fresh fish, although salmon is readily available year round. Also check the cookbook for the Roasted Spice Glazed Salmon which marinates in pineapple juice and then spread with a spice rub before baking. 2-1/2 to 3-pound salmon fillet
Soy sauce for rubbing the salmon
Fresh bay leaves and thyme sprigs for garnish if desired
Mustard dill sauce
Ingredients Mustard Dill Sauce
½ cup coarse-grain mustard
¼ cup water
½ cup heavy cream
¼ cup olive oil
4 tsp sugar
½ cup chopped fresh dill, or to taste
Instructions for Salmon
Preheat broiler. Rinse salmon and pat dry.
Arrange salmon, skin side down, on a foil-lined jelly-roll pan and rub thoroughly with soy sauce. Season salmon with salt and pepper and broil about 4 inches from heat 12 –15 minutes, or until just cooked through.
Transfer salmon to a platter and garnish with herbs. Serve salmon warm or at room temperature with mustard dill sauce. If using on a buffet table, you can score the fish prior to broiling. This will make serving easier.
Instructions for Sauce
In a bowl combine well all ingredients and season with pepper. Sauce may be made 1 day ahead and kept chilled, covered. Let sauce come to room temperature and whisk before serving. Makes about 1-1/2 cups
