Accompaniments: Herb Roasted Potatoes

Ingredients 
2 large baking potatoes
1 cup olive oil
¼ tsp oregano
¼ tsp thyme
salt & white pepper

Ingredients 
Peel baking potatoes and slice in half lengthwise. Heat olive oil in a shallow stovetop/baking pan and fry potatoes, flat side down, for about 2 minutes. Sprinkle with salt, white pepper, oregano, and thyme. Cover with aluminum foil and bake 45 minutes at 400°. Optional: When baking is complete, turn potatoes over and brush with melted butter. Broil until bubbly. Remove from pan and serve with dome side up.
