1 1/2 pounds of large white potatoes, peeled, rinsed and dried
1 tbs unsalted butterV 1 tbs olive oilV salt and freshly ground black pepper to tasteV
Using a 3/4 inch round or larger melon ball cutter, cut the potatoes into balls. In a heavy skillet with a lid, heat the butter and olive oil. When light brown in color, add the potato balls and reduce the heat to low. Cover and cook, shaking the pan or stirring every 5 minutes, until the potatoes are golden brown and tender in the center.
