Recipe of the Month – November 2013
Accompaniments: Roasted Mashed Sweet Potatoes with Cayenne & Lime
3 pounds sweet potatoes
2 tbs olive oil
¼ cup (1/2 stick) unsalted butter
Juice of 1 lime
Sea salt to taste
¼ tsp cayenne pepper
Scrub the sweet potatoes and pat dry. Place in a large bowl. Add the olive oil and toss to coat. Pierce a few holes in the sweet potatoes. Place on a baking sheet.
Bake at 375? for 30-40 minutes or until the sweet potatoes are soft. Cool slightly.
Peel the sweet potatoes and place in a large mixing bowl.
Add the butter and lime juice and mash until smooth. Season with sea salt and cayenne pepper.
