Accompaniments: Rosemary Roasted Potatoes
3 pounds medium sized red potatoes
3 tbs olive oil
1 tbs chopped fresh rosemary
Lightly oil a gelly roll pan or shallow baking dish. Adjust oven rack to hightest point in oven and preheat to 425 degrees. Cut potatoes in half and then into 3-4 wedges per half. Toss them in a large bowl with olive oil and rosemary. Spread on pan so they are not touching and the skin sides are touching the pan. Bake for 30 to 35 minutes until well browned. Remove from oven to a bowl and sprinkle with Kosher salt and serve immediately.
