Desserts: Strawberry Shortcake

Ingredients Shortcake
2 cups sifted all-purpose flour
¼ cup granulated sugar
3 tsp baking powder
½ tsp salt
½ cup butter or margarine
¾ cup milk

Ingredients Berry Topping
1½ quart strawberries
¾ cup granulated sugar
1 cup heavy cream
2 tbs confectioners’ sugar

Instructions 
Lightly grease an 8-by-8-by-2-inch pan. Into medium mixing bowl, sift together flour, sugar, baking powder, and salt. With pastry blender or 2 knives cut in butter until mixture resembles coarse cornmeal. Make a well in center of flour mixture. Pour in milk all at once; mix with fork just until flour is moistened. Dough will be lumpy. Spoon dough into prepared pan; then, press with fingers to fit pan. Bake 12-15 minutes, or until golden and a cake tester inserted in center comes out clean. Cool partially; cut into 9 squares. Meanwhile, make Berry Topping: Set aside some good-looking berries for garnish. Then, in a bowl and using a potato masher, crush 3 cups of berries. Stir in granulated sugar; add remaining uncrushed berries. Whip cream until stiff with confectioners’ sugar. To serve: Split shortcake squares in half crosswise. Place bottom half on each serving plate; spoon on 3 tablespoons berry mixture. Top with other half; spoon on 1 tablespoon berry mixture. Finish with a heaping tablespoon whipped cream and berries reserved for garnish.
